Condiments: Delicious Homemade Corn Relish

The last couple of months at work has been crazy busy. My colleagues and I have been working on a major event for work, which was last week. What a relief it’s all over and all see all the fruits of our labour! It was great to see all the things we produced, such as billboards, airport banners, city banners, gifts for delegates (including bespoke Melbourne designed and made scarves), printed canvas bags along with the creation of a Melbourne style cafe (I’ve had to put my interior designer’s hat on over the last few weeks!). Although it’s meant long hours and tight deadlines and timelines, it has been a great project to work on. I’m a little sad it’s all done and dusted but also relieved. I’m now playing catch up with my day to day duties (and happily settle into a slower paced work day).

The other week I noticed cheap flights from Hobart to Melbourne so last minute my Mum decided to come up for the weekend! So nice to catch up, hang out and for me to do some retail therapy (sorry Mum, I know you’re not a fan of shopping!). We went for a late lunch to the Smith Street Alimentari and then went to the circus later that evening, which was kind of an odd choice but I couldn’t turn down free tickets! On Sunday we had a super lazy day, watched some movies, made a delicious vegetarian lasagne for lunch (from the Rainbow Silverbeet/Swiss Chard out of my garden!!!) and a hearty roast chook for dinner. YUM. It was so good having Mum over, but it was Monday before I knew it and back to work :(

Anyway, as with the last few recipes, this was photographed for Barkly Square and the recipe can be found over here. It’s really great served on a cheese board or in sandwiches. In fact, I was a little obsessed with it until it ran out. I’d put it on everything! Oh which reminds me of another great recipe I made, which I’ll share with you next week.

    Super simple to make and very versatile relish recipe. What’s not to like – it looks chewy, sweet and flavorful. A must try.
