Colourful Winter Salad with Toasted Walnuts and Pomegranate Molasses Dressing
It feels like Winter has beenwith us for ages, when it’s only just begun. Ever searching for the silver lining, I’m trying to make the most of all the wonderful winter ingredients that are now in season. There’s beautiful coloured cabbages, rainbow carrots and ruby red raddishes that brighten up any salad. I always try to eat foods that are naturally bright in colour…they just feel like they’re healing the body from the inside out. I’m sure it’s exactly what your body needs and craves in the middle of winter, trying to ward off all those colds and flus.
For this recipe I went to the wonderful little fruit and veggie store at Barkly Square and picked out all winter goodies that are in season. I also added some walnuts which I picked up from a Farmer’s Market a few weeks before. I find adding nuts and seeds adds another textural element in salads and a few dried fruits for pops of sweetness.
This weekend has also been a long weekend in Australia. Our friends suggested going down the coast to Wye River for the weekend, and it was the best idea ever – just what the doctor ordered! Work has been so incredibly busy at the moment, it was nice just to sit down, relax, make some mulled wine, catch up on some reading and of course boardgames. Wye River, on the Great Ocean Road, is so beautiful at this time of year (or any time of year, to be honest) but it really did turn on the good weather for us! What winter? Anyway, I don’t get down there often enough for my liking.
Oh another thing I should mention, I’ve had a name change since my post. Yes, well after getting hitched over a year ago, I finally got around to changing my name. I’m now Emily Godfrey. It’s funny, I never liked the surname Fitzgerald (for some strange reason – the ‘z’ is so pointy and it’s quite long!?!). I couldn’t wait to lose it. When the time finally came around to arranging my name change, I actually found it quite challenging. It’s like your whole identity as you’ve know it for the last 32 years is lost or gone and you start a new self. Nobody knows who Emily Godfrey is. I know it sounds all very dramatic, but it is kind of a big deal, and nobody really tells you about that. Don’t get me wrong, I’m happy to change my name and I love my new name. That said, colleagues and work contacts have really adapted to the change really quickly!?! Probably better than me! Anyway. This is the new me. Emily Godfrey. Pleased to meet you.

I honestly don’t think Winter veggies can get more beautiful than this! Just look at that colour :)
I love salads with different textures. I love adding nuts and seeds into salads to mix it up.
In this salad I managed to use the best winter vegetables in season. They’re full of colour and vitamins to ward off any nasty winter colds that may be lurking.
I often find the ‘off cuts’ from my salads are almost like works of art in themselves. For once I remembered to actually capture it on film. Don’t you think it’s beautiful?
